Carefully selected ingredients, zero-kilometre artisanal produce, cooking techniques that preserve the nutritional quality of every ingredient. Antioxidant-rich seasonal ingredients chosen from small producers of the Emilia-Romagna territory: the same attention that builds the Health Menu is what brings a Romagnola cappelletto al ragù or a Fassona tagliata to the table.

Traditional dishes from Emilia-Romagna

The nutritional quality of a dish begins to take shape before it enters the kitchen, through the way ingredients are grown and selected. Seasonal vegetables and produce come directly from the Orto Lucia Magnani and from small producers in the Emilia-Romagna territory: short supply chains, fresh raw materials, a preference for organic and less treated varieties. Ingredients richer in phytocompounds generate greater nutritional density and greater functional efficacy. Seasonal ingredients carry the phytocompounds that nature itself has developed in plants to respond to the challenges of that specific time of year.

In the kitchen, the techniques complete this journey: controlled temperatures, low-temperature sous-vide, calibrated cooking times. Methods that preserve vitamins, minerals and antioxidant molecules that aggressive cooking rapidly degrades or disperses. The strategic use of spices and aromatic herbs allows salt to be reduced, optimising the nutritional profile while keeping the pleasure of taste intact.

Marco Culeddu, Executive Chef of the Grand Hotel Castrocaro LongLife Formula, has made the Ben Essere philosophy his own and has become its natural interpreter in the kitchen, the custodian of a gastronomy that never separates the pleasure of taste from the care of the body. Transforming scientific research into a search for flavour.

He is the custodian of all Long Life Formula® gastronomy: every day he carefully selects ingredients, engages with producers from the Emilia-Romagna territory, and develops exclusive recipes born from the meeting of Romagnola tradition and functional nutrition.
